Abstract

Introduction: Bovine milk is a staple product, with high nutritional value for the population. However, the studies
in Nariño to assess its quality are scarce. Objetive: the compositional, sanitary and microbiological quality of raw
milk from crossbreed Holstein cows in Nariño was evaluated. Methods: A total of 1056 milk samples taken every 15 days after calving from 45 females were included. The compositional quality was evaluated by means of density, cryoscopic point
and acidity by NTC4987 and the percentages of fat, protein, non-fat solids (SNG) and lactose. Sanitary quality was
determined using milk antibiotics, somatic cell count (SCC) by PortaSCC and presumptive mastitis test (CMT). The microbiological quality, by the presence of Enterobacteriaceae, molds and yeasts, Staphylococcus aureus and Escherichia coli according to Charm Sciences Inc. The third of lactation and the fourths of the udder were compared with a repeated measures design and the variables were related with multivariate statistics. Results: differences by thirds were found for protein, fat, SNG, ST, lactose, acidity and pH (p < 0,05), results consistent with the literature. The milk was negative for antibiotics, there were no differences in RCS and 21 samples were positive for CMT. The presence of all the microorganisms evaluated was observed and the multivariate analysis showed a grouping of the microbiological variables with the SCR and precipitation (OR 2,35 95 % CI 1,67 to 6,4). Conclusions: increased rainfall increases the risk of infection and subclinical mastitis by 2,4 times, indicating that the hygienic quality of raw milk should be improved.
